Winemaking
During the harvest of botrytised Semillon grapes for Noble One, a selection of fruit at approximately 20-22 baume is set aside for Black Noble, showcasing intense botrytis characteristics. Fermentation is minimal before the addition of neutral grape spirit to halt further fermentation. The wine is then clarified, with a touch of brandy spirit added for extra complexity, and matured in used Noble One barriques.
