Employing the direct press method, half of the fruit undergoes whole bunch pressing while the remaining half is destemmed before pressing. Fermented in stainless steel to preserve freshness and fruit purity, with careful lees contact adding nuanced complexity.
The 2023 season experienced cool and damp conditions from mid-Autumn onwards. Grenache and Mourvedre, which ripen later, maintained their natural acidity and vibrant primary fruit characteristics, providing an ideal foundation for our rosé.
