The destemmed berries are pressed, and the juice is immediately transferred into barrels, with about 30% being new small French oak. Fermentation is natural, with no added yeast, and the wine stays on all lees for ten months until just before bottling. The 2023 vintage is remarkably fine and pure, featuring vibrant lemon and grapefruit brightness, complemented by almond meal, white flowers, and stone fruit kernel. The palate is vibrant, intense, focused, and chalky with a very long finish. It will improve for over six years and remain enjoyable for much longer.
